Who is chef Geoff Marett?
French–Hong Kong born and now Melbourne-based, Geoff brings a global perspective shaped by five formative years in Hong Kong, where he refined his craft at the iconic one-Michelin-starred yakitori restaurant, Yardbird. A chef led by bold flavour, he reimagines Cantonese classics through a lens that speaks to the local palate—familiar yet unexpected.
In recent years, Geoff has been making waves across Australia with a string of sought-after collaborations and pop-ups, each one a showcase of his evolving style. Now, he brings that energy to Yum Sing House—come experience the dishes he’s created exclusively for this moment.
What is 'Dai Pai Dong'?
Picture the energy of a roaring beer hall colliding with the chaos and charm of an open-air Asian street feast—that’s the spirit of a Dai Pai Dong. Born in post–World War II Hong Kong, these stalls began as government-issued licenses (“dai pai”) granted to families to cook and sell food on the streets, each with its own story and signature dishes.
Over time, many of these vendors moved indoors into bustling food centres, creating a melting pot of flavours under one roof. It’s communal, it’s loud, and it’s alive—beer sipped from small bowls, woks firing non-stop, and an electric atmosphere that carries on late into the night.

Beyond the signature good times you can always expect at YSH, we’re turning things all the way up—live DJs spinning R&B from day to night, with MC Naps on the mic keeping the energy high.
Chef Geoff will be serving up six bespoke dishes designed to pair perfectly with ice-cold beers, flowing sake, or a round (or two) of cocktails. To dial up the true Dai Pai Dong spirit, we’re also pouring a featured sake from MUA Craft Sake Brewery. There’ll be a cash bar stocked with all your favourites, and if you’re still craving more, a limited menu will be available from the kitchen to keep you going.
